Three LOW Carb Breads

If you really get to missing a slice of bread or toast, you may give these recipes a try.  All recipes are for use in a bread  machine... you may need to adjust them if not using a machine.


MOM'S OATMEAL MOLASSES BREAD(by Dana Carpender)

1/4 cup rolled oats
2 Tbsp raw wheat germ
2/3 cup boiling water
1 Tbsp. blackstrap molasses
1 Tbsp Splenda
1 Tbsp soft butter
1 tsp. salt
1/2 cup ground almonds
3/4 cup vital wheat gluten
1/4 cup vanilla-flavored whey protein powder
2 Tbsp water
2 tsp yeast

Put the rolled oats and wheat germ in the bread case of your bread
machine.  Pour the boiling water over them, and let them sit for at
least 15 minutes.
Add everything else in the order given, and run the machine.  Remove
the loaf from the machine and bread case promptly to cool.
Yield: 8 slices @ 5 usable grams carbs each.


SEED BREAD  by Dana Carpender

 

1/2 cup warm water
1/2 cup heavy cream
1 Tbsp oil
1 egg
1/2 tsp. salt
3/4 cup vital wheat gluten
1/2 cup oat bran
1/3 cup ground almonds
1/3 cup sunflower seeds, coarsey chopped
1/4 cup rice protein powder
2 Tbsp flaxseed
1/2 tsp blackstrap molasses
1 tsp Splenda
2 tsp yeast

Put the ingredients in your bread machine in the order given and run
the machine.  Remove the loaf from the machine and bread case
promptly to cool.  Yield:  10 slices @ 6 grams carbs each.

 

CINNAMON RAISIN BREAD  by Dana Carpender


3/4 cup plus 2 Tbsp warm water
1/4 cup oat bran
1/2 cup ground almonds
1/3 cup vanilla flavored whey protein powder
1 1/2 tsp cinnamon
3/4 cup plus 3 Tbsp vital wheat gluten
1/4 cup Splenda
1 Tbsp oil
1 tsp salt
2 tsp yeast
2 Tbsp raisins, each snipped in half.

Put the ingredients in your bread machine in the order given and run
the machine.  Remove the loaf from the machine and bread case
promptly to cool.  Yield: 12 slices @ 5.4 grams carbs each
Note:  The reason you cut the raisins in half is to let them
distribute more evenly throughout the bread.  Even so, there aren't a
lot of them, I'll admit.  That's because the raisins are the highest
carb part of this bread.  If you want, you can leave them whole so
each one will be more noticeable.
