Homemade Low Carb Tortillas

1 scoop protein powder or soy protein
isolate
2 tablespoons cream
2 tablespoons water
1 egg
(if you are feeling adventurous, try adding your
favorite herbs,
minced garlic or onion, or even ground
flax. Experiment!)
butter
Mix all the ingredients together to make a thin
batter.
Swirl some butter in a shallow skillet. Pour
about 2 tablespoons of
the batter into the pan and cook until the
surface looks set. Turn
and cook another 15-20 seconds. These can be used
for crepes,
pancakes, tortilla substitutes, or sliced thin
for noodles in soup.
Or you can wrap your fajita stuff in lettuce
leaves.
**Note: You can double or even triple this recipe
and freeze the
tortillas for future use. I would suggest that
you sandwich the
tortillas between pieces of waxed paper and then
tightly wrap with
plastic wrap before freezing.

Chips
low
carb tortillas, either homemade (recipe above) or purchased
non-stick cooking spray
spices of your choice (suggestions: garlic
powder, onion powder,
Italian seasoning blend, artificial sweetener +
cinnamon, Cajun
seasoning blend, etc.)
With a sharp knife, divide each tortilla into 6
pie-shaped wedges.
Place wedges on cookie sheet. Spray with
non-stick spray. Sprinkle
with spices.
Bake sprayed and spiced tortilla wedges in a 350
degree oven for 15
minutes, or until dried out and crisp. Cool on
wire racks. Store in
zip lock bag.
