Homemade Low Carb Tortillas
From: Jan (thatblonde)

1 scoop protein powder or soy protein isolate
2 tablespoons cream
2 tablespoons water
1 egg
(if you are feeling adventurous, try adding your favorite herbs,
minced garlic or onion, or even ground flax.  Experiment!)
butter

Mix all the ingredients together to make a thin batter.

Swirl some butter in a shallow skillet. Pour about 2 tablespoons of
the batter into the pan and cook until the surface looks set. Turn
and cook another 15-20 seconds. These can be used for crepes,
pancakes, tortilla substitutes, or sliced thin for noodles in soup.
Or you can wrap your fajita stuff in lettuce leaves.

**Note: You can double or even triple this recipe and freeze the
tortillas for future use. I would suggest that you sandwich the
tortillas between pieces of waxed paper and then tightly wrap with
plastic wrap before freezing.

non-stick cooking spray
spices of your choice (suggestions: garlic powder, onion powder,
Italian seasoning blend, artificial sweetener + cinnamon, Cajun
seasoning blend, etc.)

With a sharp knife, divide each tortilla into 6 pie-shaped wedges.
Place wedges on cookie sheet. Spray with non-stick spray. Sprinkle
with spices.
Bake sprayed and spiced tortilla wedges in a 350 degree oven for 15
minutes, or until dried out and crisp. Cool on wire racks. Store in
zip lock bag.

Enjoy!   Carmel
