If you want to get away from chips and
pizza while watching a great
football game, you might want to try some of
these low-carb snacks.
Exact amounts are not given...depends on size of
your mushrooms, etc.
Stuffed Mushrooms (1)
large mushrooms, stemmed and cleaned inside
approx.
equal amounts of:
mayonnaise
grated cheddar cheese
browned, crumbled bacon
chopped green onion (optional)
Combine the filling and divide between the
mushrooms. Put 'shrooms
on a cookie sheet and bake in a moderate oven
until the cheese is
melted and bubbly.
Stuffed Mushrooms (2)
Italian pork sausage (or your favorite)
green onion
red and/or green bell pepper, diced
cream cheese
Saute the sausage, onion and pepper until sausage
is done. Drain. Combine with cream cheese and divide between the
cleaned mushrooms. Put on cookie sheet and bake as before.
Personal Pizzas
Low
carb tortillas
ground beef
tomato sauce or pizza sauce (as low carb as you
can find )
grated cheese..your favorite kind is
fine
pizza toppings of your choice(onion, green
pepper, jalepenos, etc)
Italian seasoning or taco seasoning
In a non-stick pan, warm the tortilla until it
gets a little
golden color on each side and loses some of its
moisture. Brown the
ground beef, along with onions, peppers, or
whatever you like to
use. Stir in enough tomato sauce to coat
the beef. A few
tablespoons works for a 6" tortilla.
Add a little Italian seasoning
or add a tablespoon of taco seasoning mix and a
tablespoon or two of
water. Heat thoroughly. Spoon the mixture
onto your tortilla that
has been placed on a cookie sheet. Add
other toppings if desired.
Sprinkle with grated cheese. Bake in a
moderate oven until cheese is
bubbly and lightly browned. These are just
great!

Pork rinds
Your favorite sugar substitute
Cinnamon
Melted butter or butter-flavored Pam
Brush or spray pork rinds with butter or
Pam. Combine sugar
substitute with cinnamon and sprinkle on pork
rinds. You can heat
these in a microwave for a few seconds if
desired.
